Chocolate Chip Cookies with Einkorn Flour

Ingredients

  • 3 cups Einkorn Flour
  • 3/4 teaspoon baking soda
  • 3/4 teaspoon salt
  • 1 1/2 cups raw sugar
  • 1 cup coconut oil
  • 2 large eggs
  • 1 teaspoon vanilla
  • 2 cups chocolate chips

Directions

  1. Preheat oven to 350°F.
  2. Cream the coconut oil and raw sugar for 4 minutes or until creamy.
  3. Add eggs one at a time.
  4. Add vanilla.
  5. Sift all dry ingredients and combine with creaming mixture.
  6. Mix in chocolate chips.
  7. Scale cookies to 2 oz. each.
  8. Freeze for 30 minutes.
  9. Bake 9-12 minutes or until golden brown on top.
